Properties of amino acids

Anthocyanins [local] are a class of pigments that color fruits and flowers, red, blue, and mauve. Strawberries, blueberries, eggplant, cranberries, petunias and many foods and flowers have anthocyanins. These molecules are sensitive to pH changes and will change colors. There are other commonplace pH indicators as evidenced by changes in color with tea when a lemon is added.
