Water transfer is described in Doing Chemistry. It is messier than coin exchange, but generally regarded by students as more fun. It is much more difficult to make this a quantitative demonstration.

This experiment can be made quantitative by storing the water in large cylinders, and meauring amounts to "pass" using smaller cylinders. After a while, the amount of water passed becomes constant.
